カラダをつくり、めぐる大事な源(みなもと)となる食事。私たちが暮らすもとである日本の食や酒場の文化にこだわり、今の時代に合わせて、楽しく美味しく再構築する。そんなコンセプトを掲げてスタートした新ブランド「源(もと)」。2016年11月に第一弾となる、串揚げとワインの店舗を池袋にオープンして約2年。次なる展開として、焼き鳥業態の開発・運営に着手することになりました。

いつものように、立ち上げにおける企画およびディレクションは、前身となる企画会社が担当。またマネージャーには「串揚げとワイン 源」の店長として、現場で一から繁盛店を育て上げてきた千竈健司氏が抜擢されました。「カジュアルよりもう一段階上がった、串揚げだけでなくサービスや雰囲気、提供の仕方ふくめ、感動と驚きを与えられる店。お客さまは、普通とは違う『何か』を期待している人が多いですね。ただこちらとしては、あくまで『酒場』として、気兼ねなく楽しんでいただきたい」

培ってきたスタイルは踏襲しながら、今回さらなる飛躍を遂げるべく、スペシャルパートナーとのタッグが実現。日本を代表するワインテイスター/ソムリエの大越基裕氏、また世界的評価も高い都内のフレンチレストランで、立ち上げからスーシェフを務めた内藤千博氏による、モダン・ベトナミーズ・レストラン「アンディ」が商品開発に参加。焼き鳥という日本の食文化をリスペクトしながら、より深く、より高い次元へと導きます。

焼き鳥は「部位の違いを楽しむ」を軸に、京都「京紅地鶏」や愛知「錦爽どり」など、全国各地の個性あふれる地鶏や銘柄鷄より厳選。とりどりの味や風味、肉質を生かした一品を提供します。

またそこに新たに、内藤氏が得意とする「発酵」というテーマをプラス。「もともと発酵食品は日本の持つ伝統文化ですが、既成概念に囚われず、素材の持つ香りや味を生かし、高いバランスで引っ張りあえるものを提供したい」と語るように、独特の酸味や旨味など、現代の発酵技術を十全に生かした料理を提供。食事のはじまりに提供する6種の小皿をはじめ、サイドメニュー、タレにも発酵のエッセンスを組み込むことで、味覚の領域を広げ、最後まで飽きずに楽しく食べられるメニューを構築します。

さらに合わせるお酒は、大越氏の本領発揮。テイストが柔らかいナチュラルワインや、全国各地から選りすぐられたさまざまな表情を持つ日本酒など、焼き鳥と華麗に寄り添うアプローチャブル(親しみやすい)なセレクト。「焼き鳥にはない、強い旨味や独特の発酵フレーバー、明確な酸味を補完すれば、味覚的な満足感をより得られる。それはワインペアリングのひとつの考えと同じように、味を差し込んでいければ面白いのかなと思っています」

六本木という土地柄ゆえ、メインターゲットとするのは30代後半~50代後半の、歓楽街エリアを利用する富裕層や、エリア周辺のビジネスパーソン。また外国人観光客や、トレンドに敏感な層に向けても発信。

お料理は、コーススタイルの「おきまり」と、ストップとお声がけいただくまでご提供する「おまかせ」をご用意。ワインのデキャンタでサーブすることで、数種オーダーし、料理に合わせたペアリングをお試しいただけます。

和食らしさを存分に感じさせながら、より味わいの広さを持つ、新しい世界へと昇華させていく。いずれ海外進出を目指す源(もと)らしい、力強い旅立ちです。

Yakitori & Wine Moto

We are what we eat. Food is an important source (translated as “moto”) of energy. “Moto” is a new brand produced. The concept of this brand is to respect the native food and culture of a Japanese pub and then to reinvent them to match the modern tastes of customers who enjoy pub style cuisine. Two years ago, in November 2016, the first Moto restaurant opened in Ikebukuro serving kushiage and wine. For our next step we will feature a yakitori restaurant.

As always, one of our group companies, this time predecessor of the Planning company, is in charge of planning and directing this project. Mr. Kenji Chikama, store manager of “Kushiage & Wine Moto,” has been promoted to project manager. He has transformed Moto from scratch into a popular restaurant. He says, “We provide not only delicious kushiage but also good service and an upscale environment. I want customers to be surprised and touched by Moto and its originality. Most customers expect something special here. However, we hope that they can simply enjoy this place as an ordinary pub.”

We aim to take the traditional style of a Japanese pub and further develop it with our new concept. To do this we are collaborating with two special partners. The first is Mr. Motohiro Okoshi, a famous Japanese sommelier and wine taster, and the second is “Ăn Đi,” a modern Vietnamese restaurant produced by Mr. Chihiro Naito. Mr. Naito worked as a sous-chef at an internationally famous French restaurant in Tokyo from its inception. The two partners are helping with menu development. They respect Japanese yakitori origins while raising this specialty to a new level.

We want our customers to be able to taste each individual part of the chicken. A variety of unique types of chicken are chosen from all over Japan. For example, “Kyoaka jidori” is from Kyoto or “Kinsodori” is from Aichi. We serve a dish in which you can enjoy the excellent flavor and texture of each chicken.

Furthermore “fermentation” adds another layer to the flavor. This is Mr. Naito’s area of specialty. He says, “Fermented food is part of Japanese traditional culture. I want to break stereotypes beyond a preconceived idea so that I can utilize the taste and flavor of each ingredient, and serve dishes which influence each other in good ways.” His cooking has a special acidic taste and an umami sensation based on modern fermentation techniques. Thus fermentation essence is included in the first six small dishes, side menu and sauces. This provides menu items which cater to customers’ broader tastes and keeps them entertained throughout the meal.

Mr. Okoshi is also good at matching wine and sake with dishes. A light-bodied natural wine or various kinds of Japanese sake are chosen from all over Japan. They are easy to drink and make yakitori taste even better. Mr. Okoshi says, “We supply a strong umami taste, a characteristic flavor and a clear acidity, which yakitori doesn’t have, to each dish. By doing so customers feel satisfied. I enjoy pairing unique flavors with each dish, just like a wine pairing.”

Yakitori & Wine Moto is located in trendy Roppongi, therefore our main target demographic is affluent people in their late 30s to late 50s who enjoy visiting entertainment districts. Local business people, foreign tourists and fashion-conscious trendsetters are also in our target market.

We offer two different menu courses. One is a standard course called “okimari.” The other is “omakase,” which means “whatever comes until the customer says stop.” Wine is served in a decanter so that customers can try several kinds of wine pairings with their dishes.

We honor typical Japanese food but reinvent it into a new style with the possibilities of creating a new taste. This is Moto’s strong start, which is aimed at expanding overseas in the future.
